Indian Style Masala egg Shakshuka

Bringing a desi twist to the classic Middle Eastern dish, Indian-Style Masala Egg Shakshuka is a rich, spiced tomato-based curry infused with bold Indian flavors. With perfectly poached eggs nestled in a spicy, tangy masala, this dish is a hearty and comforting meal best enjoyed with buttered pav or crispy paratha.

Ingredients

2 tbsp oil
4 eggs
1 large onion (finely chopped)
2 green chilies (chopped)
4 garlic cloves (minced)
Coriander stalks (chopped)
3 tomatoes (pureed)
1 tsp Arusuvai Red chilli powder
½ tsp Arusuvai Turmeric powder
1 tsp Arusuvai Cumin powder
1 tsp Arusuvai Garam masala
1 tsp sugar
Salt (to taste)
Fresh coriander leaves (for garnish)
Paratha or buttered paav (for serving)

Instructions

Heat oil in a frying pan. Add chopped onions, green chilies, garlic, and coriander stalks. Sauté for 5 minutes until soft.
Add the tomato puree, Arusuvai Red Chilli powder, Arusuvai Turmeric powder, Arusuvai Cumin powder, Arusuvai Garam masala, sugar, and salt. Cook for 8-10 minutes until the mixture thicken.
Make 4 small wells in the masala and crack an egg into each one. Cover with a lid and cook on low flame for 6-8 minutes until the eggs are done
Garnish with fresh coriander leaves and serve hot with paratha or buttered pav.
