Masala Egg Muffins
Masala Egg Muffins are fluffy, savory bites loaded with veggies and spiced with Arusuvai turmeric, red chilli, and garam masala. Baked to perfection, these muffins make a quick breakfast, a healthy snack, or a perfect addition to your Easter brunch spread.
Ingredients
2 tbsp oil
1 cup finely chopped broccoli
1 small capsicum (finely chopped)
2 spring onions (chopped)
4 eggs
¼ cup milk
1 tsp Arusuvai Turmeric powder
1 tsp Arusuvai Red Chilli powder
½ tsp Arusuvai Garam masala
Salt (to taste)
½ cup grated cheese (cheddar or mozzarella)
Instructions
Preheat the oven to 200°C. Grease a muffin tray with half

Heat the remaining oil in a pan. Add broccoli, capsicum, and spring onions. Sauté for 5 minutes. Let it cool.
In a bowl, whisk the eggs with milk, turmeric, red chilli powder, garam masala, and salt. Add the sautéed veggies and half the cheese.
Pour the egg mixture into the muffin holes. Sprinkle the remaining cheese and fresh coriander on top
Bake for 15-17 minutes or until golden and firm
